Chef Greg
King a native of Asheville, NC began his career
in the restaurant industry as a kitchen steward
working his way through the ranks to Chef.
Making his debut as Chef in the small rural town
of Mineral Point, WI brewery, decided to move
into a faster pasted environment in Madison at
another larger brew pub with a great reputation
to further his education.
Upon meeting
Executive Chef Mario Maggi, an opportunity
opened to explore northern Italian cuisine; Chef
Maggi took him under his wing and trained King
in the traditional Italian techniques. Working
under Maggi for little over a year a long time
friend asked for someone to head a restaurant in
Dallas, Texas. Maggi then sent King to really
explore his new found knowledge in Italian
cuisine.
King then
opened the restaurant known as Taverna Pizzeria
& Risottoria where he became to operate a very
successful kitchen. Catering to a local
neighborhood scene of great food and lots of
friends. Working with renowned restaurateur
Alberto Lombardi became more and more proficient
in the simplicity of true Italian cuisine, “keep
it simple, fresh, and provide the best service
around. Treat every guest as they were a guest
in your home”. This was the motto Lombardi has
used in the 35 years in all of his restaurants.
Returning to
work with Chef Maggi on the coast of Florida 2
years later King, was a key player in opening a
stunning 350 seat Trattoria. This was a 12 month
project, after completion; King moved on to the
Miami coast line working up and down the coast
of Florida until returning to Wisconsin.
While working as a chef King and his wife
Jennifer decided that it was time to put the
years of knowledge to work for them selves and
with the help of the team here at Bella Roma,
want to welcome you to their home.
